110g sugar
200ml water
4 pandan leaves
Green food colouring
Second bottom layer (palm sugar flavor)
25g tapioca flour
100g palm sugar
50g sugar
200ml water
Brown/yellow food colouring
700ml coconut milk
3tbsp rice flour
1tsp salt
METHOD
Method for Ingredients A:
- Prepare the steamer
- Peel the tapioca and cut into small pieces
- Put the tapioca into the blender and blend with water until smooth
- Drain the blended tapioca into a bowl – leave for 15 mins
- Remove the clear water from the bowl, take the tapioca starch and mix it with the blended tapioca
- Divide into two portions (for the layers)
First bottom layer (pandan flavor)
- Blend the pandan leaves with the water, then drain
- Add in the tapioca flour, sugar and a drop of green food coloring
- Mix all the ingredients
- Add in the first portion of blended tapioca and mix well
- Pour the mixture into a container and cover with aluminum foil
- Steam for 30 mins
- Cut the palm sugar into small pieces
- Mix with water and cook until the palm sugar dissolve
- Add in the tapioca flour, sugar and a drop of brown/yellow food coloring
- Mix all the ingredients
- Add in another portion of blended tapioca and mix well
- Pour the mixture into the first cooked bottom layer (pandan flavor)
- Steam again for another 30 mins
- Mix all the ingredients well in a pot
- Cook over medium heat until thick – make sure you keep stirring
- Pour over the cooked tapioca
- You can eat it straight away or put it in the fridge if you prefer it cold
